Vathal kuzhambu

How to make vathal kuzhambu | Hotel style recipe

Ingredients:
200 gram small onion peeled
3 garlic punch peeled
10 turkey (sundakkai)
Small lemon size tamarind
4 dry mango(optional)
50ml gingelly oil
Salt to taste
2 tsp chili powder
1 tsp coriander powder
4 tsp vathal kuzhambu podi
1/2 tsp turmeric
1 pinch hing(perungayam)
Salt to taste

To tempering
1/2 tsp mustard seeds
2 sprig curry leaves
2 tsp gingelly oil

Preparation:
Transfer small onion to the jar and grind as fine paste and keep aside

Method:
  1. Heat pan add 50 ml gingelly oil
  2. Add turkey, fry on low heat till the raw smell disappear 
  3. Add garlic and fry on low heat until it turns golden brown
  4. Add 5 small onions and fry on low heat until it's cook well
  5. Add onion paste, Sauté it on low heat till the raw smell disappear
  6. Add chilli powder, coriander powder, vathal kuzhamu powder, turmeric powder and hing.saute them for a minute
  7. Add tamarind juice, required water and salt.mix well let it boil for a minute
  8. Add dry mango and let it cook well
  9. Further more heat a pan,add 2 tsp oil and add mustard seeds when mustard seeds start crackle add curry leaves.
  10. Pour the tempering over the vathal kuzhambu
  11. Serve vathal kulambu with rice

Add water and dry mango 
let it cook well
Further more heat a pan,add 2 tsp oil and add mustard seeds when mustard seeds start crackle add curry leaves.
Pour the tempering over the vathal kuzhambu
Mix well and serve with rice

Notes:
Dry mango is optional to the dish.
You can increase or decrease the chilly powder as per your taste.
